The chimichurri sauce is a nice bright saporous addition. ![]() I find it to be a tender cut of beef, especially when marinated. Similar to flank steak in that it cooks fairly fast and to perfection of your desired doneness. I must say that one of my favorite cuts of beef to cook is flat iron steak. ![]()
